My Mother's All-Famous Chocolate Chip Cookies!
1 C. shortening
1 C. brown sugar
1/2 C. white sugar
2 eggs
~Beat together until well blended. Then add:
1 tsp. baking soda
1 tsp. salt
~Beat into mixture. Then add:
4 Tbsp. flour+1 C. flour
~Beat into mixture. Then add:
1 C. flour
1 tsp. vanilla
~Hand stir this in, then add 1 C. chocolate chips (semi-sweet or milk, add as many as you like)! Bake 7-9 minutes, until light golden brown.
Seems a little complicated, but it is the BEST recipe ever, especially when you freeze them. ENJOY!

German Pancakes
Melt 4 Tablespoons Butter in a 9x13 pan while oven is preheating.
6 Eggs
1 Cup Flour
1/2 Teaspoon Salt
1 Cup Milk
Beat ingredients until smooth. Bake 12-15 minutes at 450 degrees. The pancake rises considerably in the pan and up the edges. Delicious topped with powdered sugar and fresh fruit!

Chicken Taco Soup
1/2 cup diced onions
1/2 cup diced green bell peppers
1 tablespoon minced garlic (or a pinch of garlic powder)
Vegetable oil
1 pound chicken breasts, boiled and shredded
1 package taco seasoning mix
1 (8-ounce) jar salsa
1 (14-ounce) can kernel corn
1 (14-ounce) can hominy
1 (16-ounce) can ranch style beans
2 (4-ounce each) cans tomato paste
2 (14-ounce each) cans chicken broth
1 (8-ounce) package cream cheese
Saute onions, green bell peppers, and garlic (I sometimes use garlic powder and it works well) in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup. Simmer on low for another 10 minutes. Serve with tortilla chips and grated Monterey jack cheese.Also, great on the second day over rice.Love, Kelli

Farewell Rice Krispies or scotcheroos
1 cup of White Karo Syrup
1 cup of White Granulated Syrup
1 cup of Creamy Peanut Butter
1 cup 6oz Chocolate Chips
1 cup 6oz Butterscotch Morsels
Put all 6 cups of Rice Krispies in a large bowl. Put the sugar and the whitekaro syrup in a pan on the stove and slowly bring it to a boil. Make sure you stir it constantly while you heat it or it will burn. As soon as it comes to a boil, take the pan off the heat and stir in the peanut butter until it is well mixed. Then pour the hot mixture over the rice krispies. Be careful not to burn yourself this mixture is very hot! Stir the mixture or margarine so our scotcheroos won't stick to the pan. Pour the scotcheroos into the buttered pan. Then spread them out evenly with the back of the spoon or your fingers.
Next you will make the topping for your scotcheroos by meltingthe chocolate chips with the butterscotch morsels. Put them both in a glass bowl and slowly melt them in you microwave. Stir them every so often to mix them and see how far they have melted. When they are completely melted and mixed together pour the mixture over your scotcheroos and spread it evely to frost the scotcheroos. EnJOY!
Sweet, Easy, Pork
2c brown sugar
2 small cans of tomato sauce
2 small cans of mexican sauce
1 can of coke
couple shakes of cayenne pepper
Just stick it into a crock pot, set it on low for 8 hours, (or high for 4) then shred it! The amount of ingredients is totally based on taste-you can adjust any amounts and it still tastes fantastic!!!
